Grilled Pork Tenderloin with a Chipotle Lime Rub

I tried this out for the first time a couple of weeks ago, and hot damn, this is going to be my new BBQ staple! Tender, perfectly cooked, and with a nice kick this’ll be a hit at any BBQ.

Ingredients:
  • About 2 lbs of pork tenderloin
  • For the rub:
  • 1 tbs chipotle powder (use less if you want it less spicy, but add more regular chili powder to substitute if you do use less)
  • 1 tbs ancho chili powder or regular chili powder
  • 1/4 cup brown sugar
  • 1 tsp garlic powder
  • 1 tbsp salt
  • 1/2 tsp black pepper
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • zest of 1 lime
Rub the mixture onto the meat. Heat up the grill, push the coals to one side, and put the tenderloin on the other side. Or if gas, cook on the cooler side. Cover the grill. Turn every few minutes to ensure even cooking, about 40 minutes, or until a meat thermometer registers 140°. Finish it off on the hot side of the grill to get some good marks, couple of minutes each side. Let rest for about 5 minutes, then slice it in 1/2″ thick slices.
